Lovely cocktail for a hot summer's day. In my opinion this is the most refreshing of all (alcoholic) cocktails. Originating from Cuba you would expect the locals know how to kick back and cool off.
- 10 fresh leaves of mint
- 1/2 medium sized lime
- 2 tablespoons caster sugar
- 1 cup ice cubes
- 45 ml white good quality rum
- 125 ml soda water
For a great Mojito, a muddler is essential.
Step 1. Chop the lime into four pieces
Step 2. Put two of the lime wedges into the glass together with the mint leaves and crush with a muddler until the lime and mint combine
Step 3. Add the other lime slices and the sugar and muddle some more
Step 4. Fill the glass with ice, then pour in the soda followed by the rum
If you don't have a muddler a small rolling pin can do the trick. Also whatever you do, don't strain the ingredients. The Mojito is not meant to be a 'smooth' drink!
